Sea Forager superstar Johnson Xiong @sosuperx has been busy transforming our fresh anchovies into beautiful boquerones, easily assembled:
Heirloom tomatoes.
Acme olive bread.
Prepped Anchovies.
Chives.

Head, gut and descale
Salt, lime, garlic, herbs, jalepenos
Brine for 48 hours
Remove from brine
Easily peel spine and tail
Submerge in grapeseed oil
Store and enjoy!
