Johnson's Anchovy prep & presentation!

Sea Forager superstar Johnson Xiong @sosuperx has been busy transforming our fresh anchovies into beautiful boquerones, easily assembled:

  • Heirloom tomatoes.

  • Acme olive bread.

  • Prepped Anchovies.

  • Chives. 

But first...we prep. *VIDEO*

Johnson's Anchovy Prep 🐟

  • Head, gut and descale

  • Salt, lime, garlic, herbs, jalepenos

  • Brine for 48 hours

  • Remove from brine

  • Easily peel spine and tail

  • Submerge in grapeseed oil

  • Store and enjoy!
