Grilled anchovies!

Does this qualify as a "recipe"? I don't know, but it's one of our favorite ways to enjoy anchovies, so here goes:

Ingredients:

  • 1 lb fresh anchoives

  • 2-3 TBSP olive oil

  • salt and pepper to taste

  • lemon wedges

Directions: (watch Kirk's "Anchovy Love" video for how to catch, prep & enjoy!)

  1. Prep your anchovies: scale them with a spoon under running water, then cut or snap the heads off and pull out the innards. Rinse, pat dry and put in a bowl. This might take a while, so put on an apron, pour yourself a glass of wine and put on some tunes. Or have your husband do it!

  2. Get your grill nice and hot

  3. Toss the cleaned anchovies with a couple tablespoons of olive oil and a teaspoon of salt and a little pepper.

  4. Place your fishies on the grill, cover and leave alone for about 4 minutes per side. Get those nice grill marks on them, and flip them carefully with your spatula.

  5. Plate them, squeeze some lemon on them, and enjoy! Great on salads, pastas, or just as a perfect snack. Cheers!
