Halibut with Salsa Verde
This sauce!! Use it on any fish, as a dip, on bread, anything. Super versatile and delicious. Pictured here on halibut with lentils and green salad.
Ingredients (for the salsa verde)
A big bunch of parsley (1.5 cups), or in my case my garden yielded only a little parsley, so I mixed fresh mint, thyme and chives) chopped
2-3 cloves of garlic, pressed
2 tablespoons of capers, plus 1 tbsp of the liquid
2 cured anchovies, chopped
¼ cup olive oil
Method
Mix everything in a food processor, blend until smooth. Add salt and pepper to taste.
For your fish, either grill it or pan fry it. I quickly marinated my halibut in olive oil, balsamic, and a bit of soy sauce, then fried it in a pan. Paired with lentils, green salad and wine – delicious!
